There is nothing better than a sweet, ripe, juicy cantaloupe. Am I right? Well, why not put that delicious cantaloupe into salad? This super easy recipe for a cantaloupe caprese salad is the perfect recipe to keep on hand this summer. It’s essentially a caprese salad, but sub in cantaloupe for the tomatoes. It turns out to be the perfect mix of sweet from the cantaloupe and salty from the mozzarella and the basil adds the perfect punch.
Ingredients
Cantaloupe
Fresh Mozzarella Pearls
Prosciutto
Basil
Olive Oil
Salt and pepper

Instructions
First cut up one cantaloupe in to bit size pieces. Or, for a quicker salad, buy the pre-cut cantaloupe and toss it into a bowl. Second, sprinkle one package of Fresh Mozzarella Pearls on top of the cantaloupe. I can usually find this near the deli section at the grocery store. Next, cut up some prosciutto, about one package per cantaloupe, and put that on top of the salad. Then, sprinkle the top with basil. Fresh basil is definitely the best idea, but if you can’t find fresh basil, you can use the semi-dry basil. Finally, sprinkle your salad with a little ground pepper and sea salt and drizzle a small amount of olive oil on the top. The olive oil is optional and not needed if you want to go for less calories, but it is delicious and just brings it all together.



My friends will back me up on this. This salad is so delicious, especially in the summer! I make this all the time. I don’t take credit for this recipe. I’m sure I saw it on Pinterest at some point, but it is my go to dish for easy friendly get togethers. It could be served at just about any time of the day or night.
